The last time we were in Portland we visited one of our favorite date spots, aka: ‘the friendliest store in town’. There, we headed to the sample counter and were introduced to a simple, locally-made treat — and it blew our minds.
Since hitting the scene last November, the tasty trio of Eliots’s Adult Nut Butters have been quickly gaining popularity with their unique flavor twists that now include Spicy Thai, Honey Chipotle, and Garam Masala!
Us Free Range Questers LOVE peanut butter on just about anything. Aside from your standard PB&J or snack cracker scenario, we spread PB on tortillas, fruit, bacon, wedges of cheese, and slightly less-predictable dishes — like the scrumptious peanut butter burger we discovered at Sacramento’s Chef’s Table. Because we are always looking for quick, protein-rich snacks while on the road, this has become our new, sticky travel staple!
When the kick of the Eliot’s Spicy Thai peanut butter hit our lucky little tastebuds, it spurred on all kinds of ideas… recipes for nectarous delights that we had never imagined until these beautiful butters hit our thankful palates. We bought out the remaining stock because we knew that the sophisticated yet playful flavors of Eliot’s Adult Nut Butters expose limitless potential for any kind of sweet or savory snack, dessert or full-blown meal.
With some ground yak we got from Specialty Meats in Hudson, WI, we decided to grill our own take on the peanut butter burger by slathering both the grilling burgers and the toasted buns in Eliot’s Garam Masala Peanut Butter before topping with bacon, a sharp white cheddar, our own Peanut Butter Ranch Dressing made with Eliot’s Spicy Thai Peanut Butter (which we also threw over a spinach salad), pickles, tomatoes and greens. AWESOME!
We’ve been using it in EVERYTHING! It adds a killer kick to our morning smoothies, tastes great over ice cream, makes a supreme glaze when marinating meat or BBQing chicken, and is the perfect addition to a steamy pot of chili!
Garam Masala Peanut Butter Smoothie
- 2 bananas
- 2 carrots
- 1 TB Coconut oil
- 1 handful of almonds
- 1/4 cup Eliot’s Adult Nut Butter (We used Garam Masala, but every variety has worked well with this recipe!)
- 1 TB raw honey
- Heaping tsp turmeric
- Coconut milk
Throw it all in a blender! Easy! Serves 2
Peanut Butter Ranch Dressing
- 1/2 cup mayo (we prefer homemade or Grapeseed oil Vegenaise for best flavor!)
- 1/2 cup sour cream
- 2 heaping TBS Eliot’s Adult Nut Butter (we used Spicy Thai!)
- 1 tsp each of fresh chopped tarragon, chives, parsley, basil, dill
- 1 dash each of ground black pepper, onion powder, and garlic salt
- Juice of 1/2 lemon
Whisk all ingredients until smooth. Serve in, on, and around everything. Works great as a dressing, sandwich spread, or dip!
